Taste the Rainbow

Let's face it, when the new year comes around we all want to be trying to be our best selves and that includes eating healthier and trying not to think about the kilos of cheese that we ate at the end of the previous year. This is a recipe for Frozen Rainbow Yoghurt Slices, a healthy way to get all your five a day, whilst still tasting sweet enough that the 'New Year Diet' doesn't feel too arduous. They take a couple of minutes to prepare and a couple of hours to freeze so a recipe you can make before bed and eat the moment you wake up. Plus they look so pretty you wouldn't be able to help yourself even if you tried!


130g blueberries

1 mango diced

5 strawberries

3 cups of plain greek yoghurt

Handful of coconut flakes

Putting it all Together

Start by slicing your fruits and placing into individual bowls.

Pop each bowl in the microwave for 1.5 minutes before adding one cup of yoghurt per bowl and mixing until combined and add one tbsp of runny honey to add some natural sweetener.

Line a baking tray with some baking paper before layering the three different yoghurts on top of each other in a pattern, using a knife to swirl the mixture. Top with coconut flakes before covering and freezing for two hours.

There you have it, a tasty, no fuss Fro-Yo Rainbow Slice, perfect for those January sweet tooth cravings!
