Ring the Pancake Bell - Salmon Oat Pancakes
So turns out there is such a thing as a Pancake Bell which is rung to call people to confession. I have a confession and it has something to do with a slight obsession with pancakes.
I am spoiling you with two pancake recipes for you to cook on Tuesday. One savoury and one sweet, in my effort to cater for all tastes. I have taken the pancake level up a notch and there's a recipe for a Mille Crepe Cake, which is just a little bit tasty.
Before that though, these Salmon Oat Pancakes are perfect to start your day the right way!
6 eggs, whites only
300g cottage cheese
100g smoked salmon
1 tbsp chopped chives
4 tbsp crème fraîche
1 squeeze lemon juice
Putting it all Together
Carefully separate the yolk and whites into different bowls. In the egg white bowl add the cottage cheese, egg whites, and oats, before whisking together, season with salt & pepper and set aside.
In a small bowl mix together the crème fraîche, chives and lemon juice and season.
Add a little oil to the pan and pour the batter in, the mixture will make 6 pancakes. Cook a couple of minutes on each side until brown on a medium heat.
When you are ready to eat, top with the smoked salmon and spoon some of the chive crème fraîche on top.
