Beef & Broccoli Ramen Noodles Recipe


Why get a takeaway this Bank Holiday weekend when you can make your own at home! This delicious bowl of goodness doesn't take long to make at all, although be prepared to leave the beef to marinate for an hour before hand. Once that's done though it's as simple as throwing it all together. Tip: I bought 2 packs of ramen noodles and just removed the flavouring sachet. Healthier than your average takeaway but just as good taste wise. We had this for our dinner the other night and there wasn't a noodle left in the pan by the end!

Ingredients

80ml vegetable/sunflower oil

2 cloves of garlic

2 tbsp red wine vinegar

60ml cup honey

130ml soy sauce

2 rump steaks

3 tbsp cornstarch

2 tbsp sesame oil

80g brown sugar

small knob of ginger

235ml beef broth

60ml cup oyster sauce

half a large broccoli

2 packets ramen noodles

Salt and pepper

1 Tsp chilli flakes

1 Tsp sesame seeds

Putting it all Together

Thinly slice the steak into strips before putting the steak pieces in a large sandwich bag.

In a bowl, combine 60ml vegetable oil, 2 tbsp red wine vinegar, 1 clove of chopped or pressed garlic, 60ml honey, 60ml soy sauce, pepper and salt. Whisk together and pour over the steak in the bag. Seal and place in the fridge for at an hour, flip the the bag halfway through.

Once the hour is up remove the steak from the bag on to a plate and cover with cornflour, tossing to coat. In a large wok or skillet pan add a little of your preserved oil and once the oil is hot add half the beef, cooking for 1 minute each side, before removing and repeating with the remaining beef. Set aside.

In the same pan add the broth, sugar, sesame oil, remaining soy sauce, 1 clove of chopped or pressed garlic, oyster sauce and grated ginger. Stir to combine before leaving to reduce and thicken on a medium heat. Whilst the sauce is bubbling away boil a small pan of water and cook the ramen noodles for a couple of minutes. Rinse under cold water once cooked.

Chop the broccoli into small pieces, before adding on top of the sauce and leave to cook for about 3 minutes. Once cooked add the meat and noodles before stirring through to cover in the sauce.

Add the chilli flakes and sesame seeds on top and enjoy!
