Mini Apple Pocket Pies
My current love affair with apple continues in these mini apple pies. Perfect for grabbing on the go or treating yourself to a few with a bowl of icecream and toffee sauce!
2 cooking apples
3tbsp brown sugar
1 1/4 tsp cornflour
1 tsp ground cinnamon
2 packets of shortcrust pastry (or make your own if you're feeling up to it)
Putting it all Together
Start by coring and peeling your apples, before cutting them into 1cm cubes. Tip into a bowl before coating with the cinnamon, sugar and cornflour.
Lay out one sheet of pastry and lightly score squares into the surface. In each 'square' spoon some apple mixture on, remmebering to leave a gap of about 1cm. Once all the squares are complete whisk the egg and brush some on to the edge of each pastry square.
Lay the second sheet of pastry over the top using the score marks on the edge of the bottom pastry as a guide to cutting the top pastry through, leaving you with indivually cut squares. Seal the edges with a fork, brush with a little more egg and sprinkle some additional brown sugar on top.
Pop in the oven for 25minutes until golden brown on top. Once cooked, remove, allow to cool slightly, before eating.
