Sometimes all you need in life is a cup of tea and a biscuit, especially when it is so cold outside and you just need to stay inside warm, with the smell of biscuits baking in the oven. These Ginger and White Chocolate Florentine biscuits are so gorgeous and the ginger is perfect for fighting those colds, although with the warmer weather hopefully all the illness will back away!
50g golden syrup
50g demerara sugar
50g plain flour
50g stem ginger in syrup, drained and chopped
200g white chocolate
Putting it all Together
Preheat the oven to 180c/160 fan and line a tray with baking paper.
Add the butter, sugar and syrup and melt over a medium heat, stirring until all has melted.
To the syrupy mixture add the flour, pistachios and ginger and stir until combined.
Spoon on to your prepared baking tray, ensuring you leave space for spread.
Bake in the oven for 8-10 minutes until golden. Leave to cool and firm on a wire rack.
Break your chocolate into a bowl and heat over a pan of water until melted. Take off the heat and allow to cool before dipping half the biscuit in the chocolate and leaving to set on a wire rack.
