Flippin' Marvellous - Mille Crepe Cake

If you know me at all you will know that Pancake Day comes second in the fight for 'Best Day of the Year.'  The only reason it is not the first is because Christmas Day means I can eat as much cheese as I like and cheese trumps all, even pancakes.

 

Here's a little history for you:

 

Pancake Day, or Shrove Tuesday, is the traditional feast day before the start of Lent on Ash Wednesday. Lent - the 40 days leading up to Easter - was traditionally a time of fasting and on Shrove Tuesday, Anglo-Saxon Christians went to confession and were "shriven" (absolved from their sins). A bell would be rung to call people to confession. This came to be called the “Pancake Bell” and is still rung today. 

 

Who knew they rang a pancake bell?! 

 

I am spoiling you with two pancake recipes for you to cook on Tuesday. One sweet and one savoury, in my effort to cater for all tastes I have pushed my thoughts about savoury pancakes (they should not be a thing!) to one side and made some Salmon Oat Pancakes which I don't mind eating at all!

 

Before that though how about a strawberry cream filled, many layered, pan-cake! I've used strawberry cream because it is also National Strawberry Day on the 27th Feb! Celebrating all of the good things in life next week.

 

Ingredients

 

Pancakes

 

210g plain flour

40g caster sugar

1/4 tsp salt

1/2 tsp baking powder

560 ml milk

Half a bar of chocolate

3 eggs

 

Cream

600ml double cream

200g strawberries

 

 

Putting it all Together 

 

In a bowl, sift the flour before combining it with the sugar, baking powder and salt. Add the eggs and 250 ml of the milk, whisking until smooth. Gradually stir in the remaining milk (310 ml).

 

 

In a saucepan heat a little oil and start to cook the crepes, one at a time. This is the bit that takes a little time, you should be able to make between 14-16 crepes with the mixture. Cook until golden brown on both sides on a low heat. Place the crepes on a plate to cool, the crepes will need to be completely cool before you add the cream.

 

 

Whilst the crepes are cooling chop your strawberries into small chunks. Pour the double cream in to a bowl and add half the chopped strawberries. Whisk the cream (I'd advise using an electric whisk) and strawberries together until thick. Add the remainder of the strawberries,some lemon zest and stir through. 

 

 

Time for the layering! On the first pancake spread a layer of strawberry cream and grate some chocolate on top, add the second crepe on top, and keep repeating until you have used up all the pancakes. Pop back in the fridge for 30 minutes for the cream to chill before slicing the pan-cake and marvelling at all the layers!
