These Feta & Asparagus Puff Parcels are the perfect addition to any summer party. The lemon used to coat the asparagus gives it a fresh feel and the saltiness of the cheese ties it all together. Really simple to make, just use shop bought puff pastry and it removes any hard work!
350g puff pastry
Packet of asparagus
1 lemon, juice and zest
2 tbsp milk
1 handful dill
3 tbsp olive oil
Putting it all Together
Preheat the oven to 200°C
On a floured surface roll out the puff pastry and cut out 8 rectangles. Prepare a baking tray with baking paper and arrange the squares on this.
Lightly cut a border around the edge of the pastry squares before brushing with milk and baking for 25 mins until well-risen and golden.
Once cooked, remove from the oven and gently cut the centre of the pastry out to form boxes. Sprinkle feta cheese in them as you go so the heat slightly absorbs the cheese in to the pastry.
Set to one side and in a pan of boiling water cook the asparagus for 5 mins.
In a bowl mix the juice and finely grated zest of the lemon, olive oil and seasoning before draining the asparagus and pouring the mixture over. Give this a toss to coat.
Arrange the asparagus into the pastry cases and top with the more feta and chopped dill.
