Look I know Autumn is coming, I've been waiting so long for it to be here, but my favourite thing about Summer are the BBQ's. Feeling a little meat fatigue however I wanted to cook something that was going to be tasty and also cater for any vegetarians attending. These Bean Burgers make you happy whether you eat meat or not and I'm only sad I didn't do them at the start of the summer.
Still as the nights draw in you could swap the bun for some rice which I'm sure would work just as well. Minimal ingredients and minimal fuss, you can have these on the table in no time.
1 large onion
1 carrot, grated
1 tin blackeye beans
1 tin borlotti beans
Putting it all Together
Heat some oil in a pan, chop and add the onion and cook over a low heat until softened.
In a food processor add the cooked onion, grated carrot, beans, and breadcrumbs before blitzing until combined.
Shape the mixture into 4 burgers.
Add some more oil to the pan and fry the burgers for 5 minutes each side, until golden brown.
Serve in a bun with lettuce and halloumi, I added a touch of sweet chilli sauce to mine as well which worked very nicely!
