If you've been following me on social media you will have seen that I have recently been diagnosed with gestational diabetes. Which means carbs and sugar are out the window but protein and fats are in.
I've always had a sweet tooth and have also been craving sugar throughout this pregnancy so I am not willing to give up on all sweet things just yet. I've made these snack balls as a healthy treat that shouldn't raise my blood sugar too much but provide the sugar I'm craving through the dates and coconut.
Really simple to make, and they last in the fridge for a couple of weeks.
220g whole almonds
220g pitted dates
170g almond butter (I made my own by whizzing 200g almonds in a food processor for 15mins)
1/2 tsp ground cinnamon
1 teaspoon vanilla extract
Couple of pinches of salt
Putting it all Together
Add the almonds to a food processor, and pulse until they are just chopped. Add the pitted dates and almond butter to the chopped almonds.
Pulse a few times, before adding the cinnamon, vanilla and salt. Whizz in the food processor until the mixture comes together.
Scoop out equal measures of the mixture using your hands to roll into balls before coating them in the desiccated coconut.
And you're done! Pop them in the fridge and grab one when you're feeling like you need a sugar pick me up with none of the bad stuff.
