If you know me you'll know that pancakes are my favourite thing in the whole world. On pancake day I eat them for breakfast, lunch and dinner. Lemon and sugar, butter and maple syrup, chocolate and strawberries, I love my sweet toppings and tucking into a giant stack.
This year though it's going to have to be a different story - thanks baby....
There is a plus side though. I've been making these banana pancakes for my breakfast and they have been making me almost as happy as a the good ol' sugar and lemon variety. GD friendly, tasty and only 2 ingredients there are pancakes you have to try this Tuesday.

Putting it all Together
Start by mashing the bananas in a bowl. Whisk the eggs before adding to the mashed banana.
Heat some oil in a saucepan before adding four tablespoons of mixture to the pan. Cook the pancakes until the bottoms look golden when you gently lift a corner.
Flip the pancakes carefully as the tops will still be quite runny. Once the other side is cooked, serve up with whipped cream and flaked almonds.
